Everything is skillfully crafted on site by Head Chocolatier Julien Rousseau and his culinary team.
Originally from the South of France, Julien has been creating beautiful confections for the past two decades. They use the finest chocolate from Cacao Barry in France – founded in 1842 – and create artisanal chocolate confections by hand, often incorporating the extraordinary ingredients and products grown and created in Nova Scotia.
ROUSSEAU Chocolates can be found at their boutique & café near the harbour on South Street in downtown Halifax. ROUSSEAU also creates bespoke privé collections for luxury hotels and partners across North America.
